Mahuva sits on the south coast of Gujarat’s Saurashtra peninsula, where summer heat and a cool sea breeze meet — the conditions India’s white-onion belt has been built on for three generations. Our partner farms hand-clean fully matured bulbs within hours of lifting, then slice straight onto low-temperature dryers so the natural sugars set rather than caramelise. The result is a clean, sweet, near-fluffy white powder — the closest dehydrated approximation of a freshly minced sweet onion you will find.
